This week we got both red and heirloom yellow. The kids like to eat them straight from the fridge. But me, I love them roasted. They are perfect on top of salads, over chicken or fish, or spread over some french bread with cheese.

Roasted tomatoes couldn't be easier! Simply wash and slice tomatoes in half. Arrange in small baking dish and coast lightly with olive oil. Sprinkle with sea salt, pepper and a dash of crushed thyme.

Bake at 300 degrees for 45 minutes, stirring once midway through the time to toss.

Here they are all cut and ready for their olive oil bath.

<div class="separator" style="clear: both; And I'm sure each is a little different from the next. Here's my version which seems to be a crowd pleaser. This recipe makes 2 large pans of chicken casserole. I usually make one for dinner and freeze the other one. Just put half your casserole in an 8" square aluminum pan and wrap tightly in foil and then put in a gallon sized freezer bag. When ready to serve, let thaw for about 30 minutes, top with chedder cheese and cook as directed below.

4 large boneless chicken breasts
1 1/2 pounds spaghetti noodles, cooked
1 can Rotel Tomatoes, UNDRAINED
1 can cream of chicken soup
1/2 onion diced
3 stalks celery, finely diced
1 lb. Velvetta Cheese, cubed
salt and peppper to taste
2 teas. dried parsley
1 teas. garlic powder
Grated parmesan cheese to taste
1 cup grated chedder cheese for each pan

In large pot place chicken breasts and cover with water. Salt and Pepper to taste. Boil until chicken is done. Remove chicken and cool. Reserve chicken broth for later.
Cook spaghetti noodles and drain. Set aside.
In spaghetti pot place tomatoes and its juice, chicken soup, onion, celery, 2 1/2 cups reserved chicken broth, cubed cheese. Simmer slowly until mixed and cheese is melted. Add salt and pepper, parsley and garlic powder. Cube chicken and add.
Add spaghetti noodles back into pot. Combine until noodles are completely mixed with sauce.
Transfer to 2 pans. Sprinkle tops with parmesan cheese.
If serving immediately top with chedder cheese.
Cover with foil. Bake at 375 degrees for 30 minutes. Remove foil and cook an additional 5 minutes to fully melt chedder cheese.

Hello Dolly Bars

<div class="separator" style="clear: both; Since I had to make 100 of them, I used a good quality red velvet cake mix. But I had to use homemade buttercream frosting! This frosting works great in a pastry bag and holds up well for cakes or cupcakes. Its easy to adapt to whatever occasion you need. Use a few drops of food coloring instead of vanilla or adapt for Chocolate or Peanut Butter frosting.

Buttercream Frosting

1 cup of butter (DON'T use margarine)
8 cups confectioners sugar
2 teas. vanilla extract
1/2 cup milk

With mixer cream butter. Add sugar and vanilla. Add milk slowly until frosting is desired consistency.

For Chocolate Frosting substitute 1/2 cup of cocoa powder for 1/2 cup of the sugar.
For Peanut Butter Frosting substitute peanut butter for all the butter.

After School Snack

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 196px;" src="http://1.bp.blogspot.com/_p3kQnnZq7mo/S0SbrUHVspI/AAAAAAAAAxY/DCdeEkWp2r4/s320/filler1.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5423631019697091218" />

One of our favorite snacks to make after school.
